Pepperoni Pizza Puffs

Puffs.
Bites.
Nibblets.
Pops.

Call them what you like. I suppose they all have their differences. Puffs are puffy while pops may not be. Pops might be smaller than bites, but bigger than nibblets. I’m sure there are other phrases out there to describe handy little chunks of food that are easy to make, delicious to eat, and are cute to boot!

I have a bunch of recipes set aside that fall into the ‘handy little chunk’ category that I’ve been wanting to make, but have not had the time for something that isn’t a full dinner meal. Puffs and bites and nibblets and pops make great snacks. When it boils down to dinner time, I want something that does more than satisfy my cravings and general hunger; I want all encompassing nutrition which you can get with some recipes, but not all.

I would say the pepperoni pizza puffs make a great finger food for parties, unless paired with a salad full of veggies if you’re trying to pass it off as dinner fare. I mean, that’s what I’m planning on doing when we feel like having pizza but don’t want to pay the price of ordering out or running down to our go-to Godfather’s, which again, still ends up costing us $7 each for pizza and drink. These with a nice healthy side would be perfect, methinks.

Pepperoni Pizza Puffs

Ingredients

3/4 cup flour
3/4 teaspoon baking powder
1/2 teaspoon garlic powder
3/4 cup whole milk skim milk
1 egg, lightly beaten
4 ounces mozzarella cheese, shredded
1 ounce pepperjack cheese, shredded
1 ounce sharp white cheddar cheese, shredded
2 ounces cheddar-jack cheese, shredded
2 ounces mini turkey pepperoni
4 ounces low-fat sausage, cooked and crumbled
1/2 cup pizza sauce

Directions

1) Pre-heat the oven to 375°. Grease a 24-cup mini-muffin pan.

2) In a large bowl, whisk together the flour, garlic powder and baking powder; whisk in the milk and egg. Stir in the mozzarella, sausage and pepperoni; let stand for 10 minutes.

3) Stir the batter and divide among the mini-muffin cups. Bake until puffed and golden, 20 to 25 minutes.

4) Meanwhile, microwave the pizza sauce until warmed through. Serve the puffs with the pizza sauce for dipping.
